The Cheese Making Process Can Result In Different Kinds of Cheese

The cultures make the curd firm. The curd is then cut into smaller pieces, then you let it rust until it reaches its pH level so it will be able to unmold. Upon its unmolding state, you can now hand salt it or dip it into brine. This forms the rind which prepares it for the next stage which is the affinage process. It is a process that ages the cheese. During this stage, you can change its conditions every time. You can brush it, pat it, wash it or clean it (whatever you want). This last process can make each cheese unique because of the effect each condition has on it which results into a different kind of cheese every time.
