How To Make Cheese
Cheese is a dairy product
which is prepared by coagulation. The milk is acidified using
bacteria which produced using bacteria culture. A person can
make cheese easily by having some essential
ingredients.
Types of
cheese: Cheese is prepared in various styles and
textures with different taste. It all depends on the milk that
is used and also the animal's diet. The factors are whether the
milk is pasteurized, the bacteria species that is used,
butterfat content and the length of the aging process.
Flavouring agents that are used are spices, wood smoke and
herbs. The colouring can be changed to red by adding
annatto.
Curdling:
This step includes converting milk into curd and whey in
liquefied form. It is done by acidifying the milk and mixing
some rennet. The acidification also includes adding vinegar.
The cheese is prepared from bacteria's like Streptococci,
Lactoccoi and lactobacilli. Some cultures also include
Propionibacter shermani that creates carbon dioxide during the
process of aging and makes holes in the solid curd.
Rennet will make the cheese
thick and elastic. The acid coagulation process will produce a
fragile curd. It will help in making the curd less acidic. It
is a very important part because the bacteria that help in
making the flavour will be inserted into an environment that
has high acidity content. The soft and fresh cheese is prepared
with a high amount of acid through rennet. It helps in giving
the cheese a longer storage life.
